- Winemaking
- Technique de sélection des baies unique au monde (Tribaie, Calibaie, etc.). Fine sélection parcellaire par la dégustation pour travailler et sublimer l'amplitude et la rondeur de cette cuvée. Macération : infusion par immersion totale du marc permettant une extraction douce sans pompe. Les importantes recherches sur la microbiologie de nos vins nous ont permis de maîtriser le processus de vinification et limiter l'usage du sulfite. Vinification en cuve inox thermorégulée.
How to serve it
- Take the bottle out of the cellar half an hour before serving.
- Open it an hour ahead so it can breathe; decant the young vintages.
- Serve it in a large stemmed glass, filled to a third.
